If you love hummus, you’ll love this easy sweet potato hummus! You get all the benefits of sweet potatoes; like, fiber, potassium, vitamin A and C, plus manganese and it even has 6 grams of protein per cup.
- Four cups cooked and mashed sweet potatoes
- 1/4 cup lime juice
- 2 garlic cloves, minced
- 2 tsp ground cumin
- 1/4 tsp cayenne pepper (or paprika if you don’t want it as spicy)
- Sea salt and fresh ground black pepper to taste
In a large bowl, combine the mashed sweet potatoes, lime juice, garlic, cumin and cayenne (or paprika) and mix well with food processor or blender (careful not to over mix). Then add sea salt and ground pepper to taste. Refrigerate and enjoy as a sandwich spread, with corn chips, as a veggie dip.
